<p>Ana Leão tem alma de viajante e a sua cozinha também. Nascida no Porto, a chef partiu cedo em busca de mundo; passou por Espanha e pelo el Bulli, mudou-se para Austrália onde tem estado nos últimos anos e há cerca de um está de volta a Portugal e, por agora, estacionada em Vila Nova de Milfontes. A fundadora do projecto Colher Torta, dedicado a eventos gastronómicos pop up, abraça em paralelo um novo desafio: a cozinha do Statera do Hotel Selina, onde se propõe fazer aquilo que mais gosta, cozinhar com ingredientes (es)colhidos a dedo por si, cozinhá-los e partilhá-los com o mundo.</p>

O borrego é a cria da ovelha antes de atingir a idade de cordeiro, isto é, é um animal com menos de um ano. Também conhecido por anho, a sua carne é uma óptima fonte de proteínas e vitamina B12. Duas dicas preciosas na hora de escolher favas: a qualidade: escolha as vagens mais grossas, sem manchas escuras ou amareladas; &#8211; Quantidade: calcule que um quilo de favas (contando com o peso da vagem) deverá chegar para cerca de seis pessoas.⠀E sim, estas favas foram parar ao prato.</p>

<p>Consideradas invasoras, estas ervas originárias do Médio Oriente são costumeiras por todo o país, em especial no Alentejo, onde são muitas as suas utilizações na gastronomia regional. Entre outras curiosidades e singularidades, destacam-se as seguintes: as beldroegas são uma das maiores fontes vegetais de ácidos gordos ómega-3 e a intensidade do seu travo  ligeiramente ácido, varia consoante a erva seja colhida no início ou no final do dia, sendo mais ácida se apanhada de manhãzinha</p>
