<p>Nas terras frias de Barroso-Montalegre os enchidos e carnes fumadas são reis. </p>
<p>Farinhota, sangueira, pernil, barriga, chouriços; a lista é extensa e inclui a muito apreciada Alheira de Barroso-Montalegre. Produto IGP (Indicação Geográfica Protegida) é feita a partir de carne de porco da raça Bísaro com a adição de pequenas quantidades de carne de aves, caça, pão, azeite extra virgem, cebola, alho e condimentos picantes. Outra particularidade deste enchido advém do facto de ser fumado de forma indireta, uma vez que as casas locais com as suas lareiras sempre acesas proporcionam o ambiente perfeito para um processo de defumação lenta e suave, com a madeira local a conferir o seu aroma exclusivo ao enchido. Existe uma lenda que conta que a alheira é uma invenção dos judeus que, no século XV, foram expulsos de Castela e que, para se refugiarem em Trás-os-Montes e para esconderem a sua identidade, criaram um enchido que ao invés de porco levava apenas pão e frango e que mais tarde os transmontanos transformaram a receita original adicionando-lhe carne de porco. Pode ou não ser somente uma lenda, mas não deixa de ser uma história interessante associada à alheira.</p>

<p>Das muitas coisas boas que vêm dos solos férteis de Trás os Montes, a batata é talvez a mais especial.</p>
<p>O seu agradabilíssimo e muito característico sabor é resultado das condições particulares dos solos, do relevo e clima da região bem como “da cama quente proporcionada pelos terrenos bem estrumados e sachados”. Ligeiramente adocicada e com um aroma agradável, a batata de Trás-os-Montes é um produto de Indicação Geográfica Protegida, apreciado pelas suas unicidades como o já referido “sabor adocicado, decorrente da relação açúcar/amido verdadeiramente excecional e uma textura ideal para ‘absorver’ os gostos dos molhos dos pratos com carnes gordas (porco), base da gastronomia da região”.</p>

<p>Trás-os-Montes tem uma longa tradição de enchidos e fumeiro e esta uma das suas mais fulgurantes estrelas. </p>
<p>O Butelo de Vinhais (IGP) - também conhecido como Bucho de Vinhais ou Chouriço de Ossos de Vinhais - é reconhecido pelo seu sabor único que advém de quatro factores fundamentais: a alimentação dos porcos, o método de produção utilizado, a fumagem lenta que permite a selagem dos aromas e a cura em ambiente fresco e seco. Como é se faz este enchido? Simples (ou não): “as carnes com ossos e as cartilagens (da zona das vértebras e costelas do porco) são cortadas em pequenos pedaços e colocadas num recipiente onde são temperadas. Esta mistura — conhecida por adoba — repousa durante um a três dias. Após os últimos acertos na condimentação procede-se ao enchimento em tripa grossa, estômago ou bexiga previamente cosidos ou atados com fio de algodão numa das extremidades, sendo a outra atada depois das “carnes” estarem bem compactadas. De seguida realiza-se a fumagem em fogo brando, com lenha de carvalho ou castanho, durante pelo menos 15 dias, à qual se segue um período de cura, em locais frescos”.</p>
