<p>É rei e senhor do receituário português e por isso as dicas que se seguem são para guardar com carinho e recordar na hora de escolher o fiel amigo. </p>
<p>O bom bacalhau é o do Atlântico (Gadus morhua), que tem postas altas que lascam na perfeição depois de cozinhado, ao contrário do que acontece com o bacalhau-do-pacífico (Gadus macrocephalus). Opte por uma peça bem seca e de cor uniforme, compre inteiro e peça para cortar as várias partes - lombos, postas, abas e rabo. Para saber se o bacalhau iniciou o seu processo de salga em alto mar, verifique se a parte onde se inseria a cabeça está plana. Para demolhar o dito aceite as sugestões do chef Vítor Sobral, um especialista no tema: “O processo de demolha do bacalhau é o que o faz retomar o nível de água que perdeu durante a secagem e deve seguir alguns cuidados. Antes de tudo, deve-se passar o bacalhau por água corrente para retirar o excesso de sal. Depois, devemos colocar o bacalhau num recipiente com água fria e com a pele virada para cima (para que a pele não impeça o sal de sair), com a água a cobrir. A demolha deve ser sempre feita com água fria e no frigorífico. A água deverá ser mudada duas vezes por dia. O tempo de demolha depende do tipo de corte: os lombos demorarão mais tempo do que os cortes mais finos, o melhor é demolhá-los separadamente. Os lombos, corte que vamos usar na receita desta semana, podem demorar de 4 a 5 dias até estarem bem demolhados. Atenção para não demolhar em demasia, o bacalhau deverá sempre estar ligeiramente salgado, com o sabor que tão bem o português conhece!”</p>

A fama de fazer bem aos olhos vem do tempo da Segunda Guerra Mundial quando cartazes de propaganda apregoavam que era graças ao consumo de cenoura que os pilotos aliados conseguiam ver bem os alvos alemães, a história pegou e todos nos habituámos a ouvir de pequenos que “a cenoura faz bem aos olhos”. Mas esse está longe de ser o seu único benefício: além de fonte de betacaroteno, pigmento antioxidante e precursor da vitamina A, é também fonte de fibras e minerais como cálcio, sódio e potássio. A forma mais comum de consumo são as raízes cruas ou cozidas - raladas ou fatiadas - em saladas, mas a versatilidade da cenoura permite utilizá-la como ingrediente de bolos, sopas, pães, sumos, purés e doces. Além da cor laranja, a mais costumeira nos mercados, a cenoura pode também aparecer em tons de branco, amarela ou roxo.</p>

Pode ultrapassar os três metros de comprimento e os 500 quilos, pelo que é um cobiçado troféu para pescadores desportivos. Nas águas portuguesas - da costa continental a ambos os arquipélagos - o espadarte é presença comum. As águas ao largo de Sesimbra, que tem uma longa tradição na pesca do espadarte, são um dos pontos de passagem do peixe que nos meses de outono, durante o movimento migratório para o Mediterrâneo onde faz a sua desova, se aproxima mais da costa. “A sua carne macia e a ausência de espinhas tornam-no bastante apreciado, quer pela comunidade local, habituada a confecioná-lo de formas mais tradicionais, designadamente grelhado, de cebolada ou de caldeirada, quer por parte dos chefes de cozinha, que nos oferecem hoje uma maior variedade de pratos sofisticados à base de espadarte”, pode ler-se na revista Sesimbr’Acontece.</p>

<p>Invertebrado marinho parente da estrela-do-mar, esconde-se nas rochas e alimenta-se de algas e pequenos invertebrados. Suculento, fresco e com um intenso sabor a mar, é uma iguaria apreciada por todo o mundo</p>
<p>O oceano inteiro numa só garfada (ou colherada): talvez esta seja a melhor síntese do que é degustar um ouriço do mar. Invertebrado marinho parente da estrela-do-mar, esconde-se nas rochas e alimenta-se de algas e pequenos invertebrados. Suculento, fresco e com um intenso sabor a mar, é uma iguaria apreciada por todo o mundo, do Japão, onde se chama “uni“, a França com as famosas “oursinades”, sem esquecer a Ericeira, a vila baptizada em sua honra - Ericeira é uma derivação de “ouriceira“ (um local com muitos ouriços). Apresenta-se em diversas tonalidades, do arroxeado ao castanho, e idealmente deve ser consumido ao natural e vivo, sendo também possível cozê-lo ao vapor, assá-lo ou adicioná-lo a arrozes ou sopas. Suculento, fresco e com um intenso sabor a mar, é uma iguaria apreciada por todo o mundo, do Japão, onde se chama “uni“, a França com as famosas “oursinades”, sem esquecer a Ericeira, a vila baptizada em sua honra &#8211; Ericeira é uma derivação de “ouriceira“ (um local com muitos ouriços). Apresenta-se em diversas tonalidades, do arroxeado ao castanho, e idealmente deve ser consumido ao natural e vivo, sendo também possível cozê-lo ao vapor, assá-lo ou adicioná-lo a arrozes ou sopas. <p>Temperado pelos ventos da serra e pela maresia, o Vinho de Carcavelos é um vinho licoroso que faz parte da história da vila e das suas imediações. Durante muito tempo a viticultura foi a actividade económica mais importante de Carcavelos, mas de há umas boas décadas a esta parte perdeu terreno para a malha urbana e hoje já poucos pés de videira se encontram lá plantados. Contudo, o Município de Cascais tem um projecto de revitalização das melhores vinhas e da criação de um polo de desenvolvimento no Mosteiro de Santa Maria do Mar para que, muito em breve, este vinho DOC renasça em terras cascalenses. Em Oeiras as vinhas ainda vingam e é lá que se continua a produzir este vinho único de sabor e aroma amendoado, perfeito para dar o pontapé de saída ou para fechar com chave de ouro uma refeição especial.</p>
