Serra da Estrela Cheese Pudding

Serra da Estrela cheese is a must at Christmas tables. This year, why not dare, in addition to the cheese itself, add this Serra da Estrela cheese pudding to the sweets table? The recipe is chef Diogo Rocha’s and goes like this:
Serra da Estrela Cheese Pudding
500g of sugar
125ml water
18 eggs (yolks)
250ml Cream
250g Serra da Estrela Cheese
Preparation: Start by mixing the cheese with the Cream in a bain-marie. In a saucepan, add the sugar with the water and heat until it reaches 107ºC. Carefully fold this preparation into the yolks, previously separated and stirred, stirring slowly and constantly. Add the cheese to the egg yolks. Line the mould with caramel and pour in the mixture. Bake in a bain-marie for 30 minutes at 160ºC covered with aluminium foil. Then remove the aluminium and let it cook for another 15 min. Remove from the oven and let it cool.
