Codfish in Olive Oil and Garlic

In the book “My Codfish Recipes”, chef Vítor Sobral presents 500 ways to cook cod. This Codfish Confitado in Olive Oil and Garlic is one of them and one that will shine on any occasion. Here is the step by step recipe:
Ingredients:
10 thick slices of Norwegian Cod
40 g of unpeeled garlic
14 peppercorns
3 bay leaves
Rosemary
White wine vinegar
Extra virgin olive oil
Traditional sea salt
Step by step:
Soak the cod and place it in an ovenproof dish seasoned with salt and the remaining ingredients. Cover it with olive oil and bake at 100º C for 1 hour. Drain the cod and keep its juices.
